• 2 2lb (2 x 1 kg) chickens, quartered
• 1 onion, minced
• 2 garlic cloves, crushed
• 6 tbsp (120 ml) olive oil
• 2 tsp sumac
• 1 tsp ground cassia
• pepper to taste
• salt to taste
Preparation:
Place the chicken pieces in a dish.
Mix the remaining ingredients together, pour over chicken.
Marinate for several hours or overnight.
Grill or barbecue, turning 3 or 4 times and basting frequently with the marinade until the chicken is browned
