"Gundabluey" Mud

The mud is made from the absorption of water by the roasted ground wattleseeds over a very low flame. It is important never to boil the seeds as the flavour becomes dusty and bitter.

Ingredients:

• 110g (3 _ oz) roasted and ground wattleseeds
• 600 ml (20 fl oz) water
• pinch salt

Preparation:

1. Cook wattleseed with water and salt in an open stainless-steel frying pan to allow quick evaporation. Do not boil.

2. Simmer, reducing volume by two-thirds, or until the grounds meet the surface of the liquid.

3. Blend the cooked grounds in a blender at high speed until they become a smooth mud.

4. Scrape the contents of the blender into a clean container, cool and seal.

5. Store in refrigerator.
